WEST LINCOLN HOT LUNCH PROGRAM
1938-1965
The first hot lunch in the West Lincoln School was started in 1938 or 1939 and a charge of 5¢ a meal was made. The children brought their own dishes from home and took then back at the end of the year. I believe the program continued for 5 years.
It was again started in 1946 under Mr. Alton Wagner's direction and continued under Mr. Allen Eliot, our present State Director. The P.T.A. sponsored this program, hiring one paid cook and volunteer help of P.T.A. mothers. This help became unreliable so the following year another cook was hired. In 1950 this program was discontinued so the rooms could be used as classrooms. The program started again in 1954 with the School Board sponsoring it. In 1959, the Lincoln School System took charge and is our present director. A Government Nutritionist has worked out the proper requirements for our daily needs and our hot lunches are supposed to meet 1/3 of the daily needs for a balanced diet.
Our lunch room has been in operation for 20 of the years since 1938 and I
have been manager for 19 years. Mrs. Carter has been here 11 years.

As of May 1999, the West Lincoln hot lunch program has been in operation for 54 years although the Lincoln Public Schools Nutrition Services has been functioning much longer. In the 1940s, the high schools helped the smaller schools and did things like make home made salad dressing, distribute paper goods and other things which were purchased centrally. Some of the schools even had an ice man who delivered ice to the schools in a horse drawn wagon. Lunches were 15-20¢ and in 1946 when Type A lunches began the price was 25¢.
The lunch room managers at West Lincoln since 1965 when Bertha Higgins wrote the above history have been: Bertha Higgins, 1958-1969, Bertha Carter, 1970-1984, Joyce Morgan, 1984-1985, Jolene Glock, 1985-1988, Zdenka Drdla, 1988-1991, and Diana Wessel-Jackson, 1991-present. All managers are required to take courses in Food Service Management at S.C.C. It usually take 2 years to complete all the classes. Since 1958, there have been on 40 kitchen assistants at West Lincoln.
In 1985, an addition was built for the kitchen. It is now used for storage and the managers office. In June, 199, the kitchen will be remodeled with new floors and equipment.
Some milestones of the hot lunch program are the following:
1989 - began serving breakfast
1992 - started offering chocolate milk every day
1994 - began serving Headstart
1994 - began Offer-vs-Serve which meant children had a choice of 2 entrees
1996 - started using the SNAP computer program for lunch payment
1997 - offered adults chef salad, baked potato or side salad lunch
In 1999, West Lincoln serves 90 children for breakfast, 380 lunches and averages 10 adult lunches daily. 22 Headstart children are also served every day. The cost of lunch in 1999 is: breakfast - 90¢ (child) or $1.25 (adult); lunch - $1.40 (child) or $2.10 (adult). Milk is 25¢ for a child or 35¢ for adult.

In 2008, West Lincoln serves 150 children for breakfast, 400 lunches and averages 10 adult lunches daily. 22 Headstart children are also served every day. The cost of lunch in 2008 is: breakfast - $1.00; (child) or $1.25 (adult); lunch - $1.90 (child) or $2.65 (adult). Milk is 35¢ for a child or 35¢ for adult.
Second lunches cost $1.55. Also there are always 2 entrees and 1 salad for the students to choose from
